Influence of Methanol Pretreatment on Wafer Absorption of Normal and Hardshell Beans

Water absorption was studied for normal and hardshell soybeans with and without methanol pretreatment at 25 and 40¡É. During soaking, hardshell soybeans gained less water and did not continue to hydrate to the same degree as the normal soybeans. Methanol pretreatment of hardshell beans improved their rate of water uptake and decreased the time needed to reach the saturation point. Activation energies ranged from 5.78 to 28.5 §» §ß^(-1) for soybeans without methanol pretreatment, whereas methanol-treated soybeans had lower values ranging from 5.57 to 17.66 §» §ß^(-1). A diffusion model with a concentration-dependent diffusion coefficient best described the experimental water absorption curves for soybeans both with and without methanol pretreatment. Diffusion coefficients (DoXlb) ranged from 0.72 to 10.30cm2/hr for treated soybeans across both soaking temperatures.
